So badly am I tempted weekly at the grocery store by the rolls of heavenly goodness aka these little babies. If I didn’t have to get milk and yogurt, I’d bypass this section of the store all together to resist the temptation. They are loaded with bad fats, sugars and sodium 🙁 They aren’t the most horrible thing we could have but why eat them when we could make them A LOT healthier?
Thanks to the blog Whole Wheat or Bust I was able to find this amazing recipe. Of course, I made it my own of course. As much as I’ve tried, I don’t like baking with all whole wheat flour so I used a little regular flour too.
1 cup whole wheat flour
3/4 cup regular flour
2 tbs of Stevia baking blend or sugar
4 teaspoons of baking powder
1/2 teaspoon salt
1 tbsp butter
1/2 cup canned raw pumpkin (again, not the pumpkin pie filling in a can).
3/4 cup skim milk
2 tbsp butter
2 tbsp pumpkin
1/2 cup Stevia baking blend or sugar
1/2 cup brown sugar
1/4 tsp molasses
3 tbsp cinnamon
dash of salt
For filling, add all ingredients and mix well. This may be a big grainy. It’s okay. Set aside.
For the dough, add all ingredients until dough ball forms. Lay down a sheet of parchment or wax paper and cover with flour. Split the dough in half. With the first half, roll it to the size of a sheet of paper approx. 8×11. Its easiest if the rolling pin has flour on it too.
Spread half the filling over the dough and roll. Do the same with the rest of the dough and filling. cut the rolls into slices Lay a piece of parchment paper on a cookie sheet and place the pieces. Bake for 12-15 minutes at 400 degrees F.
Let me know if you make them! They are wonderful and a healthier option than the ones that tempt me at the grocery store.
