This Saturday I made french toast for breakfast. Most recipes call for unhealthy things so I modified it to make it a little healthier. Here is the recipe.
Makes four-six slices
4-6 slices of whole wheat bread
1 cup of skim milk
2 egg whites
1 tbsp of cinnamon
1/2 tsp of nutmeg
1 tbsp of all natural vanilla extract
light maple syrup–with no artificial sweetener (naturally fat free)
Fresh/dried fruit for topping (optional)
unsalted butter/ spray oil to coat the skillet.
Heat skillet to low-medium heat. Spray or butter the skillet.
Mix the milk, egg whites, cinnamon, nutmeg, and vanilla extract with wisk in a flat bowl or pie pan (easier for coating the bread).
Once ingredients are mixed thoroughly, dip bread slices into mixture covering both sides.
Place coated bread slices into skillet and cook for 4-5 minutes on each side.
I topped mine with dried bananas (recipe here) that we made in the dehydrator the other week–we had a few bananas that were going bad and didn’t want them to go to waste.
