Summer invited us to her house this year and cooked for us. Here is her recipe for some delish mashed potatoes. I may have eaten two point five helpings.
6-7 medium potatoes, washed, peeled and diced
1 stick of butter, unsalted
1 Cup of Heavy Whipping Cream
Salt and Pepper, to taste
Add diced potatoes to a large stock pot and cover with water. Bring to a boil. Boil for 25 minutes or until potatoes are tender. Drain. Add butter, whipping cream, and salt & pepper. Whip with hand mixer until fluffy.
